A Smokey Flavor Grilled Burger Recipe

We can't deny the fact that most of us enjoy eating a burger. I'm a big fan of those smokey flavored burgers out there! I enjoy burger specially if the burger patties are grilled and big. Sometimes, I cook my own patties and share it with my niece and cousins. Preparing it is not that hard. You just need to have the right ingredients and a good grill to get things done. So if you haven't tried it yet, check it out for yourself! :)

INGREDIENTS:

One pound of ground beef or bison
1 teaspoon Coarse ground pepper
1 tablespoon Italian seasoning
1 teaspoon Cilantro
1 teaspoon Fresh minced garlic
2 tablespoons of Worcestershire sauce
Hamburger Buns
Lettuce (optional)
Tomato (optional)
Cheese (optional)
Bacon (optional)

PROCEDURE:

1. Mix all the ingredients such as pepper, seasoning, cilantro and garlic. Stir them well.
2. Combine and massage the ground meat with the ingredients with your hands. Mix them well to make sure the ingredients are dispersed evenly and that the ingredients are well combined with meat.
3. Take a small beef mixture, probably around 1/6 and press it on a plate. Roll and smooth the meat to create a hamburger patty size. Flatten it onto the plate with your palm. You can use wax paper sheets if you don't want to get your hands dirty, but I suggest to do this with your bare hands.
4. Make sure that the side and top of the burger is smooth to keep them in uniform. The size of the burger would depend on how big you prefer it.
5. Heat the charcoal grill for around 4-5 minutes to warm up the sureface. Put the burger patties on the grill and baste it with some barbeque sauce on top for each side.
6. Grill it for around 4 minutes or more on each side depending on how hot your grill is for a medium or medium rare burger patties. Do not flip the burger on the other side without basting the other side first with barbeque sauce to add some flavor. Cook it until you get the grill mark or you can use a thermometer to monitor the meat.
7. Add some cheese during the last minute of cooking to add some extra flavor to your burger pattie. You can serve it with some hamburger buns, tomatoes, lettuce, onions, bacon and cheese. These are optional anyway, the burger pattie itself is absolutely delicious.

Grilled Pork Ribs Recipe

Another recipe that I want to feature here is one of my favorite recipe to grill most of the time. I love pork ribs specially when it is roasted and spicy. It's a little bit time consuming but definitely worth the wait! I'm a charcoal grill user so I make sure that I have the right amount of heat so the meat will be cooked right with a very strong smokey flavor. This recipe is also good to served with a couple of mixed vegetables like beans, potato or corn. Check the recipe below and enjoy grilling!

INGREDIENTS:
1 or 2 Slabs of pork ribs
1/4 cup Soy sauce
1/4 cup Tomato paste
2 tbsp Minced garlic
1 Small finely minced onion
2 tbsp Sugar
1/4 cup Citrus juice or Calamondin (Calamansi, lemon or lime as an alternative.)
Salt and pepper
Barbeque sauce
Hot sauce (depends on how spicy you want it)
Olive oil (for basting)


PROCEDURE:
1. Prepare the marinade first by mixing all the ingredients such as garlic, calamansi, salt, pepper, soy sauce, tomato paste, onion, barbeque sauce, etc.
2. Put the slabs of pork in a vacuum sealer bag or a container and pour over the marinade. Close the sealed bag and massage the marinade all ove the pork ribs.
3. Let it sit in a refrigerator for at least 1 hour or overnight before cooking.
4. Prepare the grill and heat it up for around 10-15 minutes. Make sure that you have the right amount of heat to cook the meat.
5. Sear the pork for about 3-5 minutes per side.
6. Move the meat to the side so it won't be over the flame. When using charcoal grills, push the coals to one side and put the ribs on the other side. You can adjust the lid or flame so that when the cover of your grill is down, the temperature still stays between 250°F/120°C and 275°F/135°C. It is also advisable fi your grill has an oven thermometer feature.
7. Turn the meat about 25-30 minutes or until the meat is done. Baste it with an olive oil to keep it moist.
8. Serve it with sauted carrots, corn and green peas in butter and some mashed potatoes or beans.

Yummy Spicy Chicken Wings Recipe

After posting some entry about recipe, I will then regularly post some recipe that anyone can try and experiment with. Here's another recipe that you guys could definitely enjoy. It is very simple and easy to cook.

Here's what you need:

INGREDIENTS

Whole Chicken Wings
2 Tablespoons cayenne pepper
2 Tablespoons black pepper
2 Tablespoons garlic salt
2 Cups of Blue Cheese Dressing, recipe follows
2 Tablespoons fresh Greek oregano leaves


PROCEDURE:

1. Rinse first the chicken wings under cold running water, then drain and blot dry completely with paper towels.
2. Prepare garlic, salt, pepper, cayenne and oregano. Place the wings in a large bowl and sprinkle it with the ingredients.
3. Season just 1 side of the wings for mild, or for hotter wings, turn the wings to coat the other side with seasonings and then cover and marinate in the refrigerator for 24 hours.
4. Preheat the grill to medium-high.
5. Grill the chicken wings, turning once, until the juices run clear when pierced with a fork or until cooked.
6. Serve immediately with a side choice of dressing .

Basic Equipments For Barbeque Grilling

I enjoy grilling a lot, specially when I want to try out new meal recipe. When doing some barbeque grilling session in your garden, please make sure that you have the right equipment needed before you start grilling for your friends and family. This can prevent any accident that may occur during cooking in charcoal grill, natural or propane gas grills. Some basic guidelines and equipments are need to ensure that you will have a perfect grilling session.

First, you have to prepare the equipments you need such as grill, utensils and tools. Some of the basic tools and utensils needed are meat thermometer (to monitor the temperature of meat), thongs, spatula, fork, skewers, basting brush, grill cleaning brush and some aluminum foils.

You need to know what type of grill you will need as well. So if you will use a natural gas or propane gas grill, make sure that you have enough gas before you start grilling. And if you plan to use a charcoal barbeque grill, buy enough coals in store before you proceed with cooking.

It is also important to maintain and clean your barbeque grills after cooking to prevent them for any failure that a poorly maintained and cleaned grill may cause. Check the grill hose for gas grills while remove ashes for charcoal grills. You can also use the grill cleaning brush to clean the grid.

Stuffed And Grilled Milkfish Recipe

Another grilled recipe that I love to cook is the grilled milkfish. Anyone can cook this because it is not really hard to cook. I usually include this menu during a picnic, beach outing or drinking session. All you need to have is a fresh fish, some spices and a hot charcoal barbeque grill.

Grilled Milkfish Recipe


Serves/Makes: 4 - 6

INGREDIENTS:

1 Whole Milkfish
2 Lemon slices or Calamondin
1 1/2 Teaspoon of salt
1/8 Teaspoon of freshly ground black pepper
1/2 Cup of finely minced tomatoes
1/2 Cup of finely minced onion
2 Stalks of finely minced scallions
1 Tablespoon of lemon juice
4 Tablespoons of soy sauce

PROCEDURE:

1. Cut and remove the backbone of the milkfish by using a sharp knife.
2. Rub fish inside and out with lemon or calamondin to remove the fishy smell. Season with salt and pepper.
3. Mix the tomatoes, onions and scallions in a bowl.
4. Open the milkfish body and stuff the mixed tomatoes and onions inside.
5. Wrap it in an aluminum foil. Don't wrap it too tight.
6. Grill the milkfish for around 10-15 minutes on each side or until the fish is cooked.
7. Serve the grilled milkfish with a soy sauce mixture of calamondin or lemon.

A Delicious Grilled Squid Recipe

Whenever I have the chance, whether it's a beach party, food tripping with friends or just a casual day that I crave, we always make sure that there's a grilled squid on the table to enjoy. It is one of my favorite seafood recipe that I know how to cook. It is very simple and doesn't need too much effort or talent before you can cook it. It's been quite a while since I last ate a grilled squid, and as I am writing this post right now, I'm craving to eat some tonight. The last time I cooked this recipe, I couldn't get a charcoal and so I used an electric barbeque grill instead. It taste okay though because it is my favorite! Enjoy the meal!

A Delicious Grilled Squid Recipe

INGREDIENTS:

A large size fresh squid
Kalamansi juice (Calamondin)
Soy sauce
Sprite or 7up Soda
Coarsely Crushed Peppercorns
Diced Tomato
Diced Onions
Salt and Pepper

Note: the amount of marinade ingredients may depend on how many your squid to marinate.

PROCEDURE:

1. Wash and clean the squid. Pull out the head of the squid and remove the innards. Make sure to remove the teeth and keep aside the head and tentacles. Remove also the guts, digestive gland and cuttlebone. Wash out remaining entrails on a running water and drain.

2. Mix together all the marinade ingredients which includes soy sauce, Sprite or 7up soda, kalamansi juice and crushed peppercorns. Marinate for around 30 minutes to 1 hour before grilling.

3. Drain marinade from the squid and keep aside marinade.

4. Stuff diced tomato and onions with salt and pepper inside the squid. Place the head of the squid in place by using a bamboo skewer stick.

5. Heat up the charcoal grill. Grill the squid at around 4-6 inches above a heated charcoal for 5 to 7 minutes on each side depending on how hot the grill is.

6. Baste squid with the marinade in between.

7. Slice the squid after grilling and serve with cheese toppings, a dipping sauce of either a vinegar mixture or soy sauce with kalamansi (Calamondin).

A Basic Pork Barbeque Recipe

One of my favorite things to do during summer or picnic is to grill a pork barbeque for friends and family to enjoy. I mostly use charcoal barbeque grill in grilling which I think is one of the best and affordable equipment to use. I usually put slices of pork meat to a barbeque stick so anyone can just pick a stick and eat it instantly. I also mix a vinegar dipping sauce which I find very good that servers as a condiment for everyone. Here's a simple pork barbeque recipe that anyone can cook even if you are just new in cooking.

INGREDIENTS:
Pork belly, sliced to desired size
A cup of 7-UP
Soy sauce
Vinegar
Ketchup
Cloves of garlic, minced
Ground Pepper

Please note that the amount of ingredients would depend on how big the serving is.


PROCEDURE:

1. Mix all the ingredients in a large bowl and marinate for at least 8 hours.
2. Use barbecue sticks to skewer the meat or you may grill the meat as it is, if the pork slices are big.
3. Heat up the charcoal grill and make sure that you have the right amount of coal needed to cook the meat.
4. Grill the meat until well cooked.
5. Serve with a mixed vinegar as a dipping sauce.
